From Peter and Betsy Spann -- "We wash our feet and legs with soap and water, then step into a bucket filled with a light solution of potassium metabisulfate and water and use our hands to rub it as high on our legs as the grape juice will be touching, then step in.  We slowly take two steps forward and then two steps back, being careful to lift our feet totally out of the juice each time so we get a full crushing of the grapes.  We usually have a dry towel on the floor to step out onto when we get out of the bin and then use it to dry off.  We tread for about 20 minutes in each bin. "

The photos are about 5 days after crushing these grapes.  We did a 3 day cold soak. then innoculated so this was after fermentation had started and the cap had formed.  We usually foot tread once every other day during fermentation.  The foot treading takes the place of one of the three punch-downs for that day.

The covers on the bins in the back are styrofoam insulation coverend in plastic sheating that we use to keep the juice warm since the temperature drops significantly overnight.
